Blueberry Bliss Muffins

Today, as my husband and I did our normal Saturday routine, which includes going to our favorite farmer’s market, our eyes were drawn to the fresh blueberries in front of us. We simply had to get a bunch of them and once home, I couldn’t resist doing a little baking today.

Of course, the first thing that came to mind was Blueberry Muffins!!! I wanted to share this recipe with all of you just in case you have time to bake over this holiday weekend. 🙂 Of course, a word of caution, my husband has already devoured four of them, so you may have hide them from the ones you love!!! 🤣🤣🤣


1/2 Cup of Butter, Salted

1 1/4 Cup of Sugar

2 Cups of Flour

2 Eggs

2 Teaspoons of Baking Powder

1/2 Cup of Almond Coconut Milk

2 Cups of Fresh Blueberries (Set aside a half a cup of blueberries)


1. Pre-heat oven to 400 Degrees.

2. In your mixing bowl, cream butter and then add sugar. Mix at low speed.

3. Add eggs and mix them in.

4. Add flour, baking powder and then almond milk and mix ingredients.

5. Take 1/2 cup of blueberries and mash them with a fork. Fold them in along with the remaining blueberries.

6. Bake for 25-30 minutes.

7. Once out of the oven, sprinkle a little sugar on top if the muffins if want!!

Ninja Foodie – Tuna, Mac & Cheese

It’s another chilly night and one of the first things I think of is comfort food!!! Now we love to use our Ninja Foodie to make quick and simple meals and so I decided to share one of my recipes with you – Tuna, Mac and Cheese!!

Ingredients and Instructions

1. Put in the Ninja Foodie 1 box of elbow pasta and 4 cups of water

2. Stir

3. Set High Pressure for 4 minutes.

4. Natural release for a few minutes.

5. Then quick release.

6. Add some cheese – I used mozzarella and a little bit of cheddar.

7. Add 2 tablespoons of butter. Then add almond milk, a little black pepper.

8. Stir – add more almond milk if needed.

9. Add tuna fish and stir.

10. Then sprinkle mozzarella cheese, cheddar cheese and bread crumbs.

11. Set on Air Crisp to 390 degrees for 5 minutes.

Cream Cheese Pumpkin Pie

Cream Cheese Pumpkin Pie

Happy National Pie Day!!! 🥧🥧🥧🥧

Since today is a day to celebrate pie, I thought that I would share a recipe that adds a little twist to Pumpkin Pie!! It’s Cream Cheese Pumpkin Pie and it’s simply wonderful!! Just know that this recipe makes two pies. 🙂


Pumpkin Pie Mixture

1 1/2 cups of sugar

2 teaspoons of cinnamon

1 teaspoon of ginger

1/2 teaspoon of cloves

4 large eggs

1 can of 100% Pure Pumpkin (large can)

2 cans of evaporated milk (12 ounces each)

2 unbaked 9 inch deep dish pie crusts

Cream Cheese Mixture

2 – 8 ounce block of cream cheese

2 eggs

8 tablespoons of sugar


1. Pre-heat oven to 400 degrees.

2. Mix ingredients for the Pumpkin Pie Mixture (set aside).

3. Mix ingredients for Cream Cheese Mixture.

4. Split the Cream Cheese Mixture in half and spread evenly on the bottom of both pie crusts.

5. Pour Pumpkin Pie Mixture over the Cream Cheese Mixture.

6. Place in pre-heated oven and baked pies at 400 degree for 15 minutes and then lower oven to 350 degrees and bake for 40 – 50 minutes.

Homemade Brownies

It’s snowing this evening and there is a definite chill in the air. For dinner, I made chilli which is always perfect for a snowy night. Then I wanted to make simple, tasty dessert and I decided on homemade brownies. If you love chocolate, you will enjoy this recipe!! It’s easy to prepare and takes only 30 minutes to bake!!


1/2 cup salted butter, melted

1 cup sugar

2 eggs

2 teaspoons vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup flour

1/4 teaspoon baking powder


1. Pre-heat the oven to 350 degrees

2. Spray and 8×8 inch pan with baking spray (I use Pam Baking Spray)

3. Mix melted butter, eggs, sugar, vanilla extract

4. Whisk in flour, baking powder and cocoa powder

5. Bake for 25 – 30 minutes

Seven More Days Til Christmas 🎄 – Baking Biscotti


By now, you may have gathered that I’m Italian and that I enjoy baking and cooking!! Now that we having one more week until Christmas, it’s baking time!!! I have so many recipes that I love to make this time of the year and one that always has to be included is Biscotti which is perfect with your afternoon cup of coffee or after dinner with a glass of vino – which is the Italian way!!! 🤣🤣🤣

To start, you will need the following ingredients:

2 cups of sugar

1 cup of butter, melted

1/4 cup of anise seed and 1/4 cup of Sambuca (you can use anisette if you prefer)

2 teaspoons of vanilla and 2 tablespoons of water (or if you want, you can use 3 tablespoons of whiskey instead)

6 eggs

5 1/2 cups of flour

1 tablespoon baking powder

2 cups of chopped walnuts


1. Pre-heat your oven to 375 degrees.

2. In a big bowl, mix all of your ingredients in the order given. Just make sure that you mix in the walnuts last.

3. Cover the bowl and refrigerate the dough for 2-3 hours.

4. Grease you baking sheets (I use Pam baking spray).

5. Take your dough out if the fridge and shape your dough into small flat loaves that are about 1/2 inch thick and 2-3 inches wide and you can make the loaves as long as the pan or the width of the as shown in my picture. Simply stated, I eye it!! 🙂 Just make sure that your loaves are spaced well apart and that you can put 2 loaves on a large baking sheet.

6. Bake the loaves for 20 minutes or until browned.

7. Remove the loaves out of the oven and let them cool a little.

8. Next, cut your loaves into diagonal slices about 1/2 inch or 3/4 inch thick. Place the slices on your baking sheet and bake them at 375 degree for 15 to 20 minutes.

9. Remove biscotti from the oven and let them cool down. I store my biscotti in tins.

There is nothing better than baking cookies especially around Christmas time. As the song goes “it’s beginning to look a lot like Christmas.” Of course, it feels like Easter at our house because I have to hide them from my husband!!! Lol!!! 🤣🤣🤣 So, to start off the holiday season, I wanted to share my Peanut Butter Cookie Recipe that is made without butter. It’s a simple recipe and they taste amazing!

Preparing the batter


• 1 cup brown sugar

• 1⁄2 cup vegetable oil

• 1 cup peanut butter

• 1⁄4 teaspoon salt

• 1⁄2 teaspoon vanilla

• 1 egg

• 1 3⁄4 cups flour, sifted

• 2 teaspoons baking powder

• 2 tablespoons milk


• Cream sugar, vegetable oil, peanut butter, salt, vanilla, egg and milk.

• Add sifted flour and baking powder.

• Roll into small balls, then take fork and press them down.

• Bake at 375 for 10 minutes.

Garlic Salad Dressing Recipe

One of my favorite ingredients to use when cooking is garlic!! I love the smell of it while it is simmering on the stove and love the flavor it adds to my sauce (yes, I said sauce!!) and homemade soups.  One of the things that contributes to its amazing smell and its wonderful flavor is garlic’s active ingredient called allicin.  It is packed with antioxidants and Vitamin C & B6 too.

Many people are unaware of all the health benefits that this little member of the onion family provides, so I thought that I would highlight a few of them today.  Whether you cut it up, sauté it, eat it raw or mince it, garlic provides so many health benefits.

Now, I’m not a doctor, but I do believe in the health properties of certain things we eat and as the old expression goes, “you are what you eat.”

Some of the health benefits of garlic include:

1. Fighting the common cold and preventing viruses.

2. Boosting your immune system.

3. Assisting with acne problems.

4. Aiding with weight loss.

5. Assisting with lowering blood pressure and lowering the risk of heart disease.

Now these are just a few of the many benefits of adding garlic to your daily diet.  I also want to share with you my Garlic Dressing Recipe which tastes wonderful. Try it on your salad and let me know what you think.

Garlic Salad Dressing

4 garlic cloves, crushed
1/2 cup olive oil
1/4 cup salad oil (not peanut oil)
1 egg yolk at room temperature
1 1/2 tablespoons lemon juice
1/4 teaspoon cayenne
Black pepper, freshly ground to taste
1/4 cup dry white wine


1. Soak the crushed garlic in the salad oil for a half hour.

2. Place the egg yolk, lemon juice, and seasonings in a blender and blend them together.

3. Mix the garlic oil and the olive oil together and mix them together with the ingredients in the blender.  

4. Remove the mixture from the blender and stir in enough wine to thin it to your taste.
