Lemon Crisps Anyone? πŸ‹

Lemon Crisps

Every once in awhile, I have an urge to bake!! Usually, my favorite season for baking is around the holidays, however, every once in awhile I feel inspired to bake and the other day was just one of those days!! Our local farmer’s market was finally opened after a chilly winter and not only did we fill up our basket with local vegetables, I picked up some fresh lemons. I tend to use lemons in my water but this particular day, I wanted to make Lemon Crisps and I thought that I would share the recipe with all of you. 😊

INGREDIENTS

1 cup of salted butter

1 3oz. packaged cream cheese

1 cup sugar

1 egg yolk

1 teaspoon vanilla

1 tablespoon grated lemon rind

2 3/4 cups sifted all purpose flour

1/2 teaspoon baking powder

INSTRUCTIONS

1. Mix all ingredients together.

2. Chill dough at least 3 hours.

3. When ready to bake, pre-heat oven to 375 degrees.

4. Prep your cookie sheets and spray them with Pam Baking Spray.

5. If you want to use cookie cutters, roll into 1/4 inch thickness on a floured surface. Cut cookies with a floured cookie cutters OR If you want to save a few minutes, roll into small balls and press down with a fork.

6. Bake for 8 – 10 minutes.

Hot Chocolate Anyone?

I don’t know about you, but hot chocolate is just one of those beverages that I can have year round!!!! We are going to have cold weather this weekend and I took out my recipe to make hot chocolate and I wanted to share it with all of you! πŸ™‚

Ingredients

1/2 cup sugar


1/4 cup baking cocoa


Dash salt


1/3 cup hot water


4 cups milk ( I use Almond Milk)


3/4 teaspoon vanilla extract


Miniature marshmallows, sweetened whipped cream, cayenne or cinnamon sticks, optional


Directions


1. In a saucepan, combine sugar, cocoa and salt.

2. Add water; bring to a boil.

3. Cook and stir for 2 minutes.

4. Stir in milk; heat to serving temperature (do not boil).

5. Remove from the heat; stir in vanilla. Whisk until frothy.

If you want, feel free to garnish with marshmallows, cream, a dash of cayenne or cinnamon sticks.

Sunday Night Pasta Night

Broccoli, Italian Sausage & Rotini

I decided to try a different recipe tonight for dinner. Of course, since I’m Italian, the first thing that I think of is pasta!!! 🀣🀣🀣 So, I thought that I would share this recipe with you!!

INGREDIENTS

β€’ 1 lb rotini pasta

β€’ 1 lb frozen broccoli florets

β€’ 8 ounces Mild Italian Sausage (I take the sausage out of its casing)

β€’ 2-3 cloves of fresh garlic

β€’ 2-3 tablespoons Extra Virgin Olive Oil

β€’ 3 tablespoons butter

β€’ 1/2 cup grated parmesan cheese

DIRECTIONS

1. Boil the water and cook the Rotini according to directions on the back of the box.

2. While the pasta is cooking, pour the olive oil into a deep pan and then add the fresh garlic, Italian Sausage and Frozen Broccoli and cook at medium heat. Stir occasionally. It takes about 20 minutes to cook.

3. Once the pasta is done, add the Rotini to the pan with the sausage, broccoli and garlic. Add the butter and parmesan cheese and stir.

4. Add more cheese if you want to!!

Christmas Snickerdoodles πŸŽ„

Christmas Tin of Snickerdoodles

I just love to bake, especially around the holidays!!! Over to the weekend, we were watching a Christmas movie and the main character said that their favorite cooking was a Christmas Snickerdoodle! Not knowing what it was, I did some research about this cookie and learned that it’s a cookie made with cinnamon and sugar. Well, that was all I needed to hear and I was off to the kitchen to bake!!!! πŸ™‚ We decided that this cookie is one of our new favorites – right up there with my pizelles and biscotti recipe. So, if you haven’t tried them, it’s definitely worth taking some time this holiday to bake a batch!!

Ingredients


2 3/4 cups all-purpose flour


1 1/2 cups sugar


1 cup butter, salted, softened


2 large Eggs


2 teaspoons cream of tartar


1 teaspoon baking soda


1 teaspoon vanilla extract


Making My Batter

Sugar Mixture


3 tablespoons sugar


1 1/2 teaspoons ground cinnamon


Cinnamon & Sugar Mixture

Instructions

1. Heat oven to 400Β°F.

2. Combine all cookie ingredients in bowl. Beat at low speed, scraping bowl often, until well mixed.

3. Stir together 3 tablespoons sugar and cinnamon in another bowl.

4. Shape dough into 1 1/2-inch balls; roll in sugar mixture. Place, 2 inches apart, onto ungreased cookie sheets.

5. Bake 8-10 minutes or until edges are lightly browned

Puffed Pancake Recipe πŸ₯ž

It was a beautiful fall morning the other day and I wanted to cook a hearty breakfast for my husband. I decided on making a Puffed Pancake. The pancake itself is light and fluffy and all you do is mix the ingredients and bake in the oven.

Ingredients

Half-Stick Butter
3 eggs
3/4 cup almond milk
3/4 cup flour
1/4 teaspoon vanilla

Instructions

1. Pre-heat the oven to 425 degrees. Put half-stick of butter in a heavy baking dish (I use my Corning Ware Dish). Put pan in the oven the whole making the batter.
2. Mix 3 eggs in mixer until they are foamy.
3. Add the almond milk, flour and vanilla and blend ingredients.
4. While mixing the ingredients, check the pan periodically so the butter doesn’t burn & take hot pan out and roll the pan so the butter greases the pan.
5. Pour the batter into the hot pan and place it back in the oven.

6. Bake for 25 minutes until the pancakes is puffed and golden brown.

Asian Apple Pear & a Simple Recipe

Asian Apple Pear

Last weekend, my husband and I went to our favorite Farmer’s Market. While wandering through the market and looking for seasonal fruit and veggies, I discovered this “pear” that was shaped like an apple. We decided to get a basket of them along with some other goodies and I have to say that they are wonderful. It has this crisp taste of pear that reminds me of a Bosc pear and has a hint of apple. They are great by themselves as a healthy snack, mixed in a salad and dehydrated!!!

To dehydrate them, we used our Ninja Foodie and simply put the setting on dehydrate and used the standard temperature which 150 degrees. Next, we sliced the pears thinly, put them on a rack and set the timer for 5 hours. Once done, we tasted them and they were fantastic and had a sweet taste and were crunchy. So, if you get a chance to pick up some of these at your local Farmer’s Market this weekend, I would highly recommend them!!!

Pumpkin Pancakes πŸ₯ž

One of my favorite Fall Recipes is Pumpkin Pancakes. I think it’s because there is something about pancakes that just makes people happy. Maybe it’s the taste of the pancakes or the wonderful scent of maple syrup in the kitchen. Whatever the reason why so many people love pancakes, I wanted to share my recipe and hope that you love it as much as me and my husband do!!!

1. Whisk together:

1 1/4 cups flour;

2 tablespoons sugar;

2 teaspoons baking powder;

1/2 teaspoon each cinnamon, ground ginger, and salt;

1/8 teaspoon nutmeg; and a pinch of ground cloves.

2. In a different bowl, stir together 1 cup almond milk, 6 tablespoons canned pumpkin puree, 2 tablespoons melted butter, and 1 egg;

3. Fold mixture into dry ingredients;

4. Spray skillet with a non-stick spray. Pour in 1/4 cup batter for each pancake. Cook pancakes about 3 minutes per side. Makes 8 to 10 pancakes.

Banana Bread Recipe & Health Benefits of Bananas

One of my favorite things to bake is banana bread, so I thought today I would share with you my recipe along with the health benefits of bananas! 

Ingredients

1 cup granulated sugar

8 tablespoons (1 stick) unsalted butter, room temperature

2 large eggs

3 ripe bananas

1 tablespoon almond milk

1 teaspoon ground cinnamon

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

Directions
1. Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.

2. Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

3. In a small bowl, mash the bananas with a fork. Mix in the almond milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
4. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients & mix. 

5. Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
