Enjoying the Last Week of December

I hope everyone had a wonderful Christmas!! 🎄 I don’t know about you, but the last week of December is a time to still enjoy the holiday season. We love having our Christmas tree lights on, having a glass of eggnog and catching up on a couple Christmas movies that we missed earlier in the month.

The other thing that I love to do during this week is getting my new planner out for the upcoming year. I’m always excited about the New Year starting and all the possibilities that it holds. Of course, the idea of tossing my 2021 calendar out has crossed my mind a few times given how this year has been!! 🤣🤣🤣 So, here’s to enjoying the last week of 2021 and looking forward to 2022!!!

Two More Days Til Christmas 🎄 Peppermint Cookies

Peppermint Cookies

Happy Christmas Eve Eve!!!!! The Christmas lights are on and we are enjoying our tree today. One of the last things that we do after putting the decorations on our tree is place candy canes all around it. Of course, if you have a person who has a sugar tooth, you will notice that the candy canes slowly seem to disappear before Christmas!!! 🤣🤣🤣🤣 So before they are all gone, take couple off the Christmas tree and make this amazing cookie recipe!!!!!


3/4 cup sugar

1/2 cup salted butter, softened

1 large egg

1/2 teaspoon vanilla extract

1/4 teaspoon peppermint extract

1 1/3 cups all-purpose flour

1 teaspoon cream of tartar

1/2 teaspoon baking soda

1/2 cup crushed mini candy canes or
peppermint candies

1/4 cup sugar


STEP 1 Heat oven to 350°F. Spray cookie sheets with Pam Baking Spray or line your pans with parchment paper; set aside.

STEP 2  Combine 3/4 cup sugar, butter, egg, vanilla and peppermint extract in bowl; beat at medium speed, scraping bowl often, until creamy. Add flour, cream of tartar, baking soda and salt; beat at low speed until well mixed. Stir 1/4 cup crushed candy into dough.

STEP 3  Stir remaining 1/4 cup crushed candy into 1/4 cup sugar.

Crushed Peppermint Sugar Mixture

STEP 4  Shape dough into 3/4-inch balls; roll in sugar mixture. Place, 2 inches apart, onto prepared cookie sheets.

STEP 5  Bake 8-10 minutes or until edges are lightly browned. Do not overbake. Cool 1 minute on cookie sheet; remove to cooling rack. Cool completely.

Seven More Days Til Christmas 🎄 – Baking Biscotti


By now, you may have gathered that I’m Italian and that I enjoy baking and cooking!! Now that we having one more week until Christmas, it’s baking time!!! I have so many recipes that I love to make this time of the year and one that always has to be included is Biscotti which is perfect with your afternoon cup of coffee or after dinner with a glass of vino – which is the Italian way!!! 🤣🤣🤣

To start, you will need the following ingredients:

2 cups of sugar

1 cup of butter, melted

1/4 cup of anise seed and 1/4 cup of Sambuca (you can use anisette if you prefer)

2 teaspoons of vanilla and 2 tablespoons of water (or if you want, you can use 3 tablespoons of whiskey instead)

6 eggs

5 1/2 cups of flour

1 tablespoon baking powder

2 cups of chopped walnuts


1. Pre-heat your oven to 375 degrees.

2. In a big bowl, mix all of your ingredients in the order given. Just make sure that you mix in the walnuts last.

3. Cover the bowl and refrigerate the dough for 2-3 hours.

4. Grease you baking sheets (I use Pam baking spray).

5. Take your dough out if the fridge and shape your dough into small flat loaves that are about 1/2 inch thick and 2-3 inches wide and you can make the loaves as long as the pan or the width of the as shown in my picture. Simply stated, I eye it!! 🙂 Just make sure that your loaves are spaced well apart and that you can put 2 loaves on a large baking sheet.

6. Bake the loaves for 20 minutes or until browned.

7. Remove the loaves out of the oven and let them cool a little.

8. Next, cut your loaves into diagonal slices about 1/2 inch or 3/4 inch thick. Place the slices on your baking sheet and bake them at 375 degree for 15 to 20 minutes.

9. Remove biscotti from the oven and let them cool down. I store my biscotti in tins.

12 Days of Christmas 🎄 – A Cup of Peppermint Tea

Peppermint Tea

Usually, I have a cup of tea in the afternoon and today was no exception! One of my favorite teas is Peppermint Tea. It’s like having a candy cane in a cup!!!! Of course, with Christmas being right around the corner, taking a few minutes during the day to have a cup of tea, relax and enjoy the moment is so important.

Now as much as I enjoy drinking my tea, what I didn’t know is all of the health benefits that come from having a cup of Peppermint Tea a day. Below are couple health benefits that I wanted to share with you:

1. It relieves stress.

2. It helps with digestion.

3. It gives a boost to the immune system.

4. It promotes better sleep.

5. It eases headaches.

6. It can help with nasal congestion.

So, in the midst of all the hustle and bustle of the holiday season, take a moment and have a cup of Peppermint Tea!!!

Enjoying the Little Things at Christmas 🎄

“Oh, Christmas Tree”

One of our favorite things each year is putting up and decorating our Christmas tree!!! 🎄 This year, we decided to put our tree up on Thanksgiving and decorate it over the holiday weekend. Each ornament tells a little story!! We have ones from when we were married, our honeymoon, places we have traveled to and other ornaments we have collected along the way.

The best part about having our tree decorated is that we can enjoy the beautiful lights every night. It may sound silly, but we love it!!!!

Now that holiday season is here, I hope that you take time to enjoy the little things, whether it’s being with your spouse, spending time with family and friends, making that special recipe that reminds you of Christmas.

Christmas Snickerdoodles 🎄

Christmas Tin of Snickerdoodles

I just love to bake, especially around the holidays!!! Over to the weekend, we were watching a Christmas movie and the main character said that their favorite cooking was a Christmas Snickerdoodle! Not knowing what it was, I did some research about this cookie and learned that it’s a cookie made with cinnamon and sugar. Well, that was all I needed to hear and I was off to the kitchen to bake!!!! 🙂 We decided that this cookie is one of our new favorites – right up there with my pizelles and biscotti recipe. So, if you haven’t tried them, it’s definitely worth taking some time this holiday to bake a batch!!


2 3/4 cups all-purpose flour

1 1/2 cups sugar

1 cup butter, salted, softened

2 large Eggs

2 teaspoons cream of tartar

1 teaspoon baking soda

1 teaspoon vanilla extract

Making My Batter

Sugar Mixture

3 tablespoons sugar

1 1/2 teaspoons ground cinnamon

Cinnamon & Sugar Mixture


1. Heat oven to 400°F.

2. Combine all cookie ingredients in bowl. Beat at low speed, scraping bowl often, until well mixed.

3. Stir together 3 tablespoons sugar and cinnamon in another bowl.

4. Shape dough into 1 1/2-inch balls; roll in sugar mixture. Place, 2 inches apart, onto ungreased cookie sheets.

5. Bake 8-10 minutes or until edges are lightly browned

Peanut Butter Cookies without Butter

Happy National Cookie Day!!!!! 🍪🍪🍪

There is nothing better than baking cookies especially around Christmas time. As the song goes “it’s beginning to look a lot like Christmas.” Of course, it feels like Easter at our house because I have to hide them from my husband!!! Lol!!! 🤣🤣🤣 So, to start off the holiday season, I wanted to share my Peanut Butter Cookie Recipe that is made without butter. It’s a simple recipe and they taste amazing!

Preparing the batter


• 1 cup brown sugar

• 1⁄2 cup vegetable oil

• 1 cup peanut butter

• 1⁄4 teaspoon salt

• 1⁄2 teaspoon vanilla

• 1 egg

• 1 3⁄4 cups flour, sifted

• 2 teaspoons baking powder

• 2 tablespoons milk


• Cream sugar, vegetable oil, peanut butter, salt, vanilla, egg and milk.

• Add sifted flour and baking powder.

• Roll into small balls, then take fork and press them down.

• Bake at 375 for 10 minutes.
