To our surprise, we are getting a dose of winter today. Rain, sleet and yes, SNOW!!! Well, that’s March for you!! 🤣🤣🤣 We were so excited about the springlike weather – even our daffodils started producing flowers.
So, what to do on a chilly, cold winter day? Yes, make a big crockpot of Lima Bean Soup. We soaked the beans overnight in anticipation of a cold day and put the soup on early this morning. I even did a little baking too. 🙂
If you love soup, here’s my Lima Bean Soup Recipe:
3 red potatoes, diced
1 onion, diced
3 carrots, diced
5 cups of Lima Beans
2 Boxes of Chicken Stock (I prefer Cento’s)
½ stick butter
3 to 4 strips Turkey Bacon
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons of Italian Seasoning
1. Combine all ingredients in your crook pot.
2. Cook on high for five hours.
3. Allow to cool slightly and serve!
